چکیده

The investigation of a reaction-diffusion system with new nonlinear reactions kinetics to model the fermentation of wine is presented. The reactive part extends existing ordinary differential models by taking into account oxygen availability and ethanol toxicity. The presence of spatial diffusion and the inclusion of a heat equation allow geometrical and thermal effects in the model. Existence, uniqueness, and regularity of solutions to this system of reactiondiffusion partial differential equations are discussed. A boundary optimal control problem is formulated with the purpose of steering an ideal fermentation process. This optimal control problem is theoretically investigated and numerically solved in the adjoint method framework. The existence of an optimal control is proved, and its solution is characterized by means

Pullback D-attractors for non-autonomous partly dissipative reaction-diffusion equations in unbounded domains

At present paper, we establish the existence of pullback $mathcal{D}$-attractor for the process associated with non-autonomous partly dissipative reaction-diffusion equation in $L^2(mathbb{R}^n)times L^2(mathbb{R}^n)$. In order to do this, by energy equation method we show that the process, which possesses a pullback $mathcal{D}$-absorbing set, is pullback $widehat{D}_0$-asymptotically compact.

A CFD Simulation of Hydrogen Production in Microreactors

In this study, the modeling of hydrogen production process in microreactors by methanol-steam reforming reaction is investigated. The catalytic reaction of methanol-steam reforming producing hydrogen is simulated considering a 3D geometry for the microreactor. To calculate diffusion among species, mixture average correlations are compared to Stephan-Maxwell equations. The reactions occurring in...

Yeast Interactions in Inoculated Wine Fermentation

The use of selected starter culture is widely diffused in winemaking. In pure fermentation, the ability of inoculated Saccharomyces cerevisiae to suppress the wild microflora is one of the most important feature determining the starter ability to dominate the process. Since the wine is the result of the interaction of several yeast species and strains, many studies are available on the effect o...

Control of flavor development in wine during and after malolactic fermentation by Oenococcus oeni.

During malolactic fermentation in wine by Oenococcus oeni, the degradation of citric acid was delayed compared to the degradation of malic acid. The maximum concentration of diacetyl, an intermediary compound in the citric acid metabolism with a buttery or nutty flavor, coincided with the exhaustion of malic acid in the wine. The maximum concentration of diacetyl obtained during malolactic ferm...

Differences in the glucose and fructose consumption profiles in diverse Saccharomyces wine species and their hybrids during grape juice fermentation.

Yeasts with a high fructose consumption capability are very important for winemakers to solve problems associated with sluggish or stuck fermentations causing undesirable sweetness in wines. In the present study, we analyze the kinetics of glucose and fructose consumption during wine fermentations performed at low (12 degrees C) and high (28 degrees C) temperatures by twelve different yeast str...
